Winter soup – white beans, kale and cavolo nero <3

How was your christmas? We had a lovely one with the family and a friend of ours, we of course ate too much but the food was reasonably healthy! We are still not sure about NYE its always a last minute thing but we are not in the mood for crazy parties as everyone is saving for one thing or another! I already booked my first trip of 2014 to Switzerland, quite happy never been there, my other half has family there so I’m going to meet them 🙂
My gym has been a bit of a hit and miss, not being able to go more than twice a week as I have been really tiref, hope that will change in the new year. I have too a few ideas that I need to check out, some things that I would love to fo, will tell if it happens 😉
Even the blog has been a little bit less about me and just about recipes but want to change that a bit, sometimes it becames overwhelming to keep on top of everything!What are your plans for NYE?

I will try to completely quit processed sweets ( this is going to be very difficult), but at the very least, to not eat any sweets in my workplace, I just need to bake bit more and be more organised… Would love to have a career change, something mors to fo with food and at last to go back to my weight before quitting smoking (its not a lot of weigh but it’s very difficult to lose it!)..So now the recipe :
White beans soup with kale and cavolo nero (dark green cabbage) – ingredients 4 potatoes,1 onion, 2 cloves of garlic, 1 can of white beans, 2 courgettes, seasoning to taste,olive oil. Cook 20m and blend andd the greens, cook 15m.  Really good and simple after christmas.

Sopa de feijao branco e 2as variedades de couve (uma bastante encaracolada e outra de folhas quase pretas) – ingredientes : 4 batatas, 1 cebola, 2 dentes de alho,1 lata de feijao branco, sal e pimenta q.b. 2as courgettes, azeite. Cozer os vegetais e usar a varinha magica. Adicionar a couve cortada fina e deixar cozinhar durante mais 15 minutos. Uma sopa facil e saborosa depois de todos os excessos do natal.

Waffle sandwich bread – rosemary and garlic!

English Version :

What are you having for lunch? I just had a camembert, tomato and watercress waffle sandwich ( with garlic and rosemary )! Delish 

For the waffle bread :
1 cup of oats
1 cup of wholemeal flour
1/2 cup of protein powder ( or just flour)
1/2 cup of pumpkin seeds
1 teaspoon of baking soda
1 pinch of salt
2.5 cups of water

Fry 1 big clove of garlic with 1 tablespoon of dry rosemary and olive oil. Mix this with all the above ingredients. Place into waffle maker for 10 to 15 minutes. Serve with your favourite sandwich fillers! Makes 4 closed sandwiches or 8 open. I believe you can do it as a pancake, but it will require patience, it has to be done slowly and without flipping it too much in a slow heat.

Versão Portuguesa:

O que vão comer hoje ao almoçco? Eu fiz uma sandwich- waffle ( com alho e rosmaninho) de tomate camembert e agrião! Delicioso )

Para o Pão-Waffle:
1 taça de aveia
1 taça de farinha integral
1/2 taça de proteina em pò ( ou farinha integral)
1/2 taça de sementes de cabaça
1 colher de chà de bicabornato de soda
1 pitada de sal
2.5 taças de agua

Frite 1 dente de alho picado com uma colher de rosmaninho em azeite. Quando feito misture com todos os ingredientes, deve ficar com uma massa liquida, mas não demasiado. Coloque na maquina de fazer waffles e espere entre 10 a 15 minutos. Sirva com os recheios de que gosta mais!Faz 4 sandwiches fechadas ou 8 abertas. Se quiser fazer como crepe tambem pode, mas tem que ser em lume brando e com bastante paciencia para não patir.

I didn’t know I much I missed the gym, until I started again! Today went for a yoga class and fell amazing, full of energy, have another class tonight, yay! Need to go to swim too, as this new gym that I joined has a good pool, haven’t done that since high school 😮  Do you swim? Do you prefer it to classes? Korean style bulgogi beef with spicy greens

Korean style bulgogi beef with spicy stir fried greens, spring onions and tomatoes . A lazy saturday lunch recipe ❤

Recipe:
Slice beef thinly and marinate with korean BBQ sauce, for 15m. Put a bit of olive oil in a pan and cook for 15m or to your taste.
For the greens add garlic and chilies to olive oil and fry add greens and spring onions and cook for 10m , add the tomatoes and leave it for 5m maximum just enough to warm the tomato so we can get the best out of it nutritionally, but we don’t want any sauce.Add salt to taste. Plate and sprinkle the food with sesame seeds!

2 very easy pasta dishes!

First pasta dish is a veggie one with some shaved parmigiano on top! Just boil the pasta and on another pan stir fry the vegetables, I used fresh tomatoes,garlic, broccoli, red bell peppers, purple cabbage and carrots. Let the pasta cook for around 10m and the veggies for 15m, once everything is cooked but still al dente, combine everything, and top with the cheese, for a vegan option, leave the last step out or use a cheese substitute.

The 2nd dish is even easier, just boil some pasta, once is done drain and mix in some canned tuna, olive oil, black pepper and olives, mix it very well and it’s ready to serve ! This one I made very quickly today for my other half to take to work 🙂

What are your favorite pasta dishes? I have to say that I’m not the biggest pasta fan but D. is italian so we eat it every once in awhile.

Rice with prawns, peas and parsley, simple and quick meal!

Very simple dish, still tasty and healthy. Just put some olive oil in a pan with garlic and parsley. Let it fry lightly and add the rice, it fry for another 5 minutes, in with the prawns and peas, stir a bit and add the water and salt. The rice ratio is 1 cup of rice for 2 of  water. Cook the rice for 15m and let it stand for 5m.
