Guilt free coconut cake!

This week treat! Coconut cake with chocolate icing, but a healthy one 😉

Recipe :
160grs of coconut
2 tablespoons of coconut flour
1 teaspoon of psyllium husk
3 eggs
3 or 4 tablespoons of 100% maple syrup

Icing :
200grs of dark chocolate
2 tablespoons of 100% maple syrup
1 tablespoon of coconut oil

Mix all the cake ingredients together and bake for 30m at 180C.
Melt the chocolate with the other ingredients and cover the cake .
Let it cool down completely before slicing it. 
Try this almost guilt free cake, so yum!

Bolo de coco saudavel e delicioso!

Receita :
160grs de coco seco
2 colheres de sopa de farinha de coco
1 colher de chà de casca das sementes de psílio (ou mais 1 ovo)
3 ovos
3 ou 4 colheres de sopa de xarope de acer ou mel

Cobertura:
200grs de chocolate escuro
2 colheres de sopa de xarope de acer
1 colher de sopa de oleo de coco

Misturar bem todos os ingredientes da massa do bolo e levar ao forno a 180C durante 30m.
Derreter o chocolate com os restantes ingredientes e colocar por cima do bolo. Deixar arrefecer bem antes de cortar as fatias.Delicioso e saudavel .

Polenta chips with greens !

Polenta “chips” with greens 

Cook your polenta according to the packet instructions, and add green cabbage to it, salt and pepper. Once cooked transfer to a big tray and let it cool. Once cooled cut into chips , transfer into another tray, drizzle with olive oil and cook for a few minutes in high heat until crispy.
Stir fry parsley, spring onion, garlic and cabbage. Add a bit of salt and pepper and a drizzle of olive oil, if needed add a bit of water.

“Batatas fritas” feitas de polenta com vegetais verdes 

Cozinhar a polenta (farinha de milho) de acordo com as instrucçoes, adicionar, sal, pimenta e couve cortada aos pedacinhos. Quando estiver cozinha colocar numa travessa grande e quadrada e deixar arrefecer. Quando estiver durinha e fria, cortar a polenta em batatas fritas grossas, colocar noutra travessa de ir ao forno, colocar um bocadinho de azeite por cima e levar ao forno bem quente durante uns minutos ate ficar meia crocante.
Cozinhar bastante salsa, cebolinho, couve galega, e alho num bocadinho de azeite durante uns 5 a 8 minutos, se necessario colocar um bocadinho de agua para ajudar na cozedura. Tempero q.b. Bom apetite!

Mediterranean Feast! Uau

I’m in a great mood today, woke up early, went for a long walk with my other half and it was really sunny  So when I came home I made homemade “nutella” a different recipe, coconut cake (both to be shared another day) and a Mediterranean feast! All was homemade except the falafel ( I bought an organic mix and did it at home).
Guacamole : 1 big avocado (ripe), 1 tomato, 1/4 of a red onion plus salt, pepper, olive oil and lemon juice, all processed in a blender for a few seconds.
Hummus : 1 can of chickpeas, 1 big tablespoon of tahini (unhulled), olive oil, a big squeeze of lemon , 2 cloves of garlic, salt and pepper (if you want it more creamy or spreadable just add more water like I did instead of olive oil – you still use a bit of olive oil but not all of it to make it smoother).
Salad : ripe tomatoes, lots of parsley, red onion and in the end I added pomegranate (took the picture before).
For the falafel, you buy the mix and add water, boil it and after lightly fry it.
I made myself a wrap, and it was _delicious_!

Hoje acordei super bem disposta e cedo, entao deu tempo para ir passear com o meu parceiro, estava um dia maravilhoso cheio de sol! Quando cheguei a casa decidi fazer “nutella” caseira, uma receita diferente da outra que postei uma vez, esta é mais decadente, mas ainda assim saudavel. Fiz tambem bolo de coco com cobertura de chocolate (ambas as receitas irei postar noutro dia). E por fim um jantar mediterranico que consistia de :
Guacamole : 1 avocado grande, 1 tomate bem maduro, 1/4 cebola roxa, tudo junto com um bocadinho de sumo de limao, sal, pimenta e azeita na trituradora durante uns segundos, ate macio mas inda com pedacinhos.
Hummus : 1 lata de grao de bico processada tambem com 1 colher de sopa de pasta de sementes de sesamo com casca (tahini), azeite, bastante sumo de limao, sal, 2 dentes de alho e pimenta ( nao usar so azeita para ficar macio, usar um bocadinho eo resto fazer com agua, para nao ficar demasiado gorduroso).
Salada : fiz com bastante salsa, tomates bem maduros, cebola roxa e no fim adicionei roma, mas ja tinha tirado a foto.
Falafel : bolinhas fritas feitas com farinha d grao de bico – comprei uma mix biologica e so segui as instrucçoes de preparaçao, é bastante simples.

Com isto fiz um wrap, usando uma tortilla, estava uma delicia!

Breakfast Club , yes it means pancakes!

I’m obsessed with breakfast, lovely healthy sweet colorful fruity breakfasts! I try to make them as beautiful and diverse as I can, so I tend to have proper breakfast instead of toast and butter (which I did for many years). I don’t feel so hungry during the day and tend to eat less and make better choices 🙂 So this is what I have been having this week :

1 egg,1 banana, 2 tablespoons of oats, 1 tablespoon of chia and 1 tablespoon of flaxmeal. Topped with PB sticky dates and fruit / 1 ovo, 1 banana, 2 CS (colher de sopa) de aveia, 1 CS de sementes de chia, 1 CS de linhaça moida. Usar oleo de coco para cozinhar. Toppings foram tamaras doces, manteiga de amendoim e fruta.

Simple version, banana, egg and oats  topped with passion fruit organic honey and strawberries. /Esta receita ja postei outras vezes, 1 ovo, 1 banana e aveia, colocar mel e maracujà por cima das panquecas e morangos .

Clean, healthy chocolate muffins!

Chocolate muffins ❤ another experiment to use my almond pulp (leftover from making milk). I didn’t measure anything, will do it next time. I used melted dark chocolate, oat flour, almond pulp, dates, banana, coconut oil, eggs, baking powder + cider vinegar, raspberries and organic “nutella” 🙂

Muffins de chocolate – nao pesei nada desta vez, mas vou repetir, pois estavam muito bons e escrevo as medidas Usei a polpa de amendoas (que sobrou de fazer o leite) , chocolate preto derretido, framboesas, ovos, oleo de coco, farinha de aveia, tamaras, banana, bicabornato de soda e vinagre de maça (para crescer), “nutella” biologica. Saboroso e sem culpa! 😉

Vegan vegetable broth

Simple broth made with vegetables and barley ❤
Just soak the barley the night before and cook it for 30 minutes, at this moment add your favourite veggies and let it cook for a further 15m, add olive oil, salt and pepper.So simple and nourishing!

Sopa de cevada e vegetais : Demolhar a cevada durante a noite e cozinhar em bastante agua durante 30m, adicionar os vegetais que preferem e cozinhar por mais 15 m. Adicionar o tempero desejavel como azeite, sal e pimenta.Saudavel e muito saboroso 🙂

Sugar free breakfast . Pumpernickel bread (wheatfree) with smashed avocado, 1 sunny egg, strawberries, peanut butter and sesame seeds. Pequeno almoço sem açucar, Pao preto alemao sem trigo, com abacate, ovo estrelado num fio de azeite, morangos, manteiga de amendoim e sementes de sesamo.

Been really busy lately, so haven’t been cooking anything worth posting lately, so here is a few things we had in our home my favorite was a treat meal of sweet potato and plantain chips, with garlic, chili and rosemary, so tasty! Some more of my almond milk and a sweet bread that still needs some work. Have a lovely week ❤

Tenho andado bastante ocupada, por isso as refeiçoes que tenho feito nao tem sido nada de especial. A minha preferida foi batatas fritas doces e banana pao, adoro com tempero de rosmaninho, alho e chili. 🙂 Leite de amendoa feito em casa que eu adoro e um pao doce que preciso de modificar a receita antes de partilhar. Boa semana 🙂

Uso sempre essa como base e depois vario, por vezes uso batata doce e cenoura, outras cenoura crua. Mudo o tipo de farinha e o tipo de adoçante. Vou ver se encontro as receitas para algumas das variaçoes

Recipe :

600g of cooked carrot and sweet potato ; 5 eggs, 300gr of flour (mix of white, spelt and coconut – coconut max of 50grs) ; 75 gr of sweet freedom ; 1 tablespoon of baking powder ; 2 tablespoons of coconut oil ; 3 tablespoons of natural yogurt. Blend all together and bake at 180C for 40m.

Receita :

600grs de cenouras e batata doce cozidas em agua ; 5 ovos ; 300grs de farinha (mistura de branca, espelta e max de 50grs de farinha de coco) ; 75gr de adoçante tipo mel ; 1 colher de sopa de fermento ; 2 colheres de sopa de oleo de coco ; 3 colheres de sopa de iogurte natural. Triturar tudo (com esta receita pode-se usar a varinha magica) e cozinhar a 180C durante 40m ou ate o palito sair seco.

Recipe :

5 medium carrots raw; 5 eggs ; 2 cups of flour (1 white, 3/4 buckwheat, 1/4 coconut) ; 3/4 cup of coconut oil ; 1 cup of coconut water ; 1 cup of sweetener ( maple, honey) ; 1 teaspoon of cinnamon ; 1/2 teaspoon of turmeric. Blend everything. Bake at 180C for 40m . This chocolate icing was made with chocolate powder, coconut cream and maple.

Receita :

5 cenouras cruas de tamanho medio ; 5 ovos ; 2 taças de farinha ( 1 de branca , 3/4 de trigo sarraceno e 1/4 de farinha de coco- ou so o trigo sarraceno) ; 3/4 Taça de oleo de coco ou azeite ; 1 taça de agua de coco ou agua de cozinhar as cascas da cenoura por exemplo ou 2 colheres de sopa de iogurte natural (mas vai modificar o resultado final) ; 1 taça de adoçante como mel, ou xarope de acer ou açucar de coco ; 1 colher de chà de canela ; 1/2 colher de chà de açafrao das indias. Triturar tudo ate ficar cremoso e cozinhar a 180C durante 40m ou ate o palito sair seco.
