Chocolate banana icecream, oh so vegan! / Gelado de banana e chocolate, sem leite, sem açucar

Jealous much? Tonight’s dessert banana and chocolate ice cream with cinnamon ❤ Just blend as many frozen bananas as you want, I think I used around 3 for this baby. I added 1 teaspoon of dark chocolate powder, no sugar added and cinnamon too. Healthy and soooo good! Added on top pecan nuts and some chia seeds. When I do my veggie and fruit shopping I always check if they have really ripe bananas , which they sell for like 1 euro a kg, which in Italy is good and when I arrive home I peel them , cut in slices and freeze for wonderful #nicecream 😉

Hoje estava com vontade de algo doce e decidi fazer um gelado de banana, ja tinha bananas congelas e cortadas e adicionei uma colher de chà de chocolate em pò e canela (e um bocadinho de leite de arroz para ajudar a triturar). Decorei com chia e pecans. Qunado compro os meus vegetais e frutas no mercado pergunto se tem bananas muito maduras, que normalmente vendem baratinho porque ja ninguem as quer, aqui em Italia eles comem as bananas meias verdes, yuckiess e quando chego a casa, descasco as bananas, corto-as as rodelas e congelo. Assim quando me da vontade faço um geladinho destes ^_^

Banana and chocolate muffins / Bolinhos de banana e chocolate

Banana and Chocolate Muffins:
Who wants some healthy muffins? My banana bread recipe makes beautiful muffins. The good thing about this recipe is that you can change around the ingredients and it always comes out well. The original recipe is vegan but I’m giving indications for the picture version 🙂

-100grs of self rising flour ( you can mix white and other like rye or wholemeal, if you don’t have self rising you can add yeast like I did)
-200grs of barley or oat flakes (or just 100grs of oats plus some more flour)
-4 big mashed bananas ( or like I did 2 mashed bananas plus 100grs of natural whole yogurt and 50grs of apple sauce)
-1 cup of raisins (you can omit, this time I didn’t put it)
-5 tablespoons of maple syrup or raw sugar
-2 big tablespoons of melted coconut oil(or other oil) (if using yogurt no need for oil, but you can add 1 big tablespoon of peanut butter)
– 1 cup of cacao nibs or dark chocolate pieces

For the muffins I used the () version I also chopped 1 banana and mixed through the batter.
Just mix all the ingredients together and bake at 180C for 40 minutes, but check always as it varies.

Versao Portuguesa :

Bolinhos de Banana e chocolate preto

Se quiserem fazer um doce saudavel este fim de semana, podem fazer o meu “pao” de banana em formas para cupcakes e fica delicioso! Esta receita é super versatil, podem variar os ingredientes e fica sempre bem, ja fiz esta receita imensas vezes e quase sempre uma versao diferente e gostam sempre 🙂

-100grs de farinha para bolos (desta vez misturei farinha de bolo branca com farinha de centeio)
-200grs de flocos de cevada ou de avena (ou 100grs de avena mais 100 de farinha)
-4 bananas grandes amassadas ( ou 2 bananas amassadas + 100grs de yogurt branco + 50grs de aqueles potinhos de puré de maça ou simplesmente 150grs de iogurte ou queijo fresco)
-1 taça de passas (ou como fiz desta vez 1 banana cortada aos pedaços)
-5 colheres de sopa de xarope de acer or açucar escuro
-2 colheres de sopa de oleo de coco derretido (ou outro) – se usarem iogurte nao ha necessidade para adicionar oleo, mas podem adicionar 1 colher de sopa de manteiga de amendoim como eu fiz, que da um sabor bom.
– 1 taça de cacao cru ou pedacinhos de chocolate escuro

Misturar tudo bem misturado e assar a 180C durante 40m, mas tem que ir prestando ateçao pois varia de acordo com fornos e formas 🙂

Vegan hot chocolate – Yum! / Chocolate quente vegano –> videos and recipes

English Version :

This hot chocolate is super decadent but still healthy, as long as you choose to use good ingredients 😉

The recipe is very simple :

100ml of rice milk

100ml of coconut milk (from a can, full fat)

1 teaspoon of corn starch like Maizena

1 tablespoon of good chocolate powder (unsweetened)

8 squares of dark chocolate 70% or up

1 tablespoon of maple syrup (or other sweetener of choice)

Mix all together and put on the stove at a medium low heat for around 10m or until it reaches the desired consistency.

If you don’t like thick hot chocolate just omit the starch (I made it like this because my other half has a problem with liquids, go figure 😉 )

And that’s all. It is very rich so you will want to share that or keep it in the fridge and the next day you will have a mousse or a chocolate frosting for your cupcakes! Hope you enjoy it 😉

Versao Portuguesa :

Este chocolate quente e’ rico, cremoso, um mimo numa noite fria 🙂 E’ delicioso e decadente mas saudavel, nao contendo lacticinios que tantas pessoas sao alergicas ou açucar refinado. Vamos la entao à receita :

100ml de leite de arroz

100ml de leite de coco (de lata, nao light, pode-se tambem so’ usar de coco e fica ainda mais cremoso)

1 colher de cha de farinha maizena (para engrossar)

1 colher de sopa de chocolate em po’ (amargo,escuro e de boa qualidade)

8 quadradinhos de chocolate escuro, de preferencia 70% ou mais

1 colher de sopa de xarope de acer (ou outro adoçante como o mel ou açucar de coco, nunca o adoçante normal)

Colocar tudo num tacho e deixar cozinhar no fogao em lume medio brando por volta de 10m ou ate’ engrossar o suficiente. Se preferirem o leite de chocolate menos grosso e’ so omitir a farinha maizena.

Made with coconut milk, eggs, avocado, chocolate powder, honey, oats, flour and baking powder. Chocolate topping is dark chocolate pieces melted with coconut milk and a tiny bit of honey and served with mashed strawberries.

Um doce rapido para o meu amor feito com leite de coco, farinha, aveia, abacate, chocolate em pò, ovos, fermento,mel. Cobertura chocolate de barra escuro derretido em leite de coco e mel,. Servi com morangos amassados. Boa noite! 🙂

Gluten free, dairy free chocolate cake / Bolo de chocolate

I broke my phone 😦 so that makes my life more difficult when it comes to the internet! So annoyed! Will try to sort that out today, have no idea how much I am going to be charged for a new screen, hope not much, as I will buy my intensive Italian course today, which is not cheap.

On the other hand, this week my experiments were a total success 😀 This chocolate cake is so good, it doesn’t taste healthy at all! I gave a couple of slices to a friend that has many food intolerance s and she loved it, so I’m chuffed 🙂 It has a bit more chocolate and maple than usual but I really wanted a treat, and my partner has been asking me to make my cakes more chocolatey so he was very happy too. #glutenfree #dairy free chocolate cake

This cake is a treat but it’s part of you 5 a day too
You will need a food processor or a very fine grater.
Recipe:
*240gr of courgette
*100gr of carrots
*3 eggs
*4 or 5 tablespoons of maple (100%)
*4 tablespoons of chocolate powder,good, dark
*100gr of rice maize (like rice flour but with more texture, just like polenta).
*2 tablespoons of oil of choice ( I used pure sunflower, but I think you can reduce to 1 as it is quite moist)
*1 cup of dark chocolate cgips ( or dark chocolate cut in small pieces)
* 1 teaspoon of baking powder + 1 teaspoon of cider vinegar
*1 heaped tablespoon of coconut flour

Blend the vegetables in the food processor or grate it very finely, add all the ingredients to the food processor (except chocolate chips) and let it smooth it out for a minute. Add the chocolate chips now and fold.
Grease a baking tray and flour it (with the rice maize) . Cook at 180C for 30 to 40 m or until baked.

Bolo de chocolate sem lactose e sem gluten e sem açucar refinado

Para este bolo é necessario uma trituradora ou um raspador .
Ingredientes :

*240 grs de courgette
*100grs de cenoura
*3 ovos
*4 colheres ou 5 de xarope de acer ou mel
*4 colheres de sopa de cacau em pò, escuro
*100 grs de farinha de arroz granulada, nao da fina
*2 colheres de sopa de oleo, coco ou girassol (pode-se diminuir para 1)
*1 taça de chocolate escuro partido aos bocadinhos
*1 colher de chà de soda + 1 colher de chà de vinagre de maça (para fazer o bolo mais leve)
*1 colher de sopa bem cheia de farinha de coco ( se usar outra farinha colocar 2 colheres).

Triturar ou raspar os vegetais e colocar os restantes ingredientes na trituradora ( excepto o chocolate partido aos bocadinhos) ate ficar tudo homogeneo ( se nao tiver trituradora depois de raspar os vegetais , usar a varinha magica so para os ovos e os vegetais e o resto dos ingredinetes misturar a mao). Colocar o chocolate e mexer bem. Untar a forma e colocar farinha de arroz. Cozinhar o bolo a 180C entre 30 e 40m . Bom apetite!

Breakfast Club , yes it means pancakes!

I’m obsessed with breakfast, lovely healthy sweet colorful fruity breakfasts! I try to make them as beautiful and diverse as I can, so I tend to have proper breakfast instead of toast and butter (which I did for many years). I don’t feel so hungry during the day and tend to eat less and make better choices 🙂 So this is what I have been having this week :

1 egg,1 banana, 2 tablespoons of oats, 1 tablespoon of chia and 1 tablespoon of flaxmeal. Topped with PB sticky dates and fruit / 1 ovo, 1 banana, 2 CS (colher de sopa) de aveia, 1 CS de sementes de chia, 1 CS de linhaça moida. Usar oleo de coco para cozinhar. Toppings foram tamaras doces, manteiga de amendoim e fruta.

Simple version, banana, egg and oats  topped with passion fruit organic honey and strawberries. /Esta receita ja postei outras vezes, 1 ovo, 1 banana e aveia, colocar mel e maracujà por cima das panquecas e morangos .
